Gram Flour Covering Potato Balls in a Sandwich Bread

About Dish

Vada pav is also classified as India's Burger which is a golden-fried spiced Vada (potatoes dumpling) placed inside a Pav (bread bun) and sprinkled with coconut chutney. The dish has originated from the Western part of India but extremely famous throughout the country. People who haven't tried a Vada pav often don't understand the alleged charms of this ordinary snack. But, trust us one bite into the deliciousness and it will all seem worth it!

How To Prepare?

Ingredients

VADA INGREDIENTS

Besan (Gram Flour)
150-200 grams

Fresh Coriander Powder (grinded or crushed)

5 grams

Red Chilli Powder

2-3 grams

Turmeric Powder

3-4 grams

Mustard Seeds

4-5 grams

Mango Powder (Amchur) OR Lemon Juice

3-4 grams OR 2-3 ml

Curry Patta (Curry Leaves)

10-12 leaves

Potatoes (Medium size)

3

Garlic

2-3 Cloves (Sliced)

Ginger

Approx. 1 inch (grated)

Green Chilies (Medium size)

1 (Finely Chopped) (NOTE: Adjust based on Spice level)

Coriander Leaves (Chopped)

COCONUT CHUTNEY INGREDIENTS

Peanuts

Coconut

50 grams (grated)

Garlic

5-6 Cloves

Red Chilli Powder 

3-4 grams (NOTE: Adjust based on Spice level)

 Preparation

Gram Flour Batter:

  • Take gram flour (besan) in a mixing bowl, add salt (but less as we are going to add in the potato mixture also), a pinch of turmeric, and pour some oil and mix well.
  • Pour water little by little to make a batter not too thin. Keep stirring while adding water so that the lumps can be removed.
  • Lastly, add some lemon juice so that gram flour puffs and keep it aside.

Potato Mixture:

  • Boil the potatoes in advance.
  • Heat oil in a pan and add mustard seeds, let them splatter.
  • Add curry leaves and saute for some seconds.
  • Add ginger, garlic and green chilli to it and let them cook for 20 seconds.
  • Add boiled potatoes by mashing them with your hands and cook them for 5 minutes.
  • Add salt, turmeric, red chilli powder (optional), coriander powder, mango powder and mix it well.
  • Cook for 3-4 minutes and add chopped green coriander, mix well, turn off the flame and allow it to cool.

Coconut Chutney:

  • Heat a pan and mix all the ingredients together
  • Roast them till the coconut starts turning light brown.
  • Grind them together and your coconut chutney is ready for the Vada Pav

Time to Make Vada (Potato Balls):

  • Mash the potatoes mixture (make sure no big pieces are present)
  • Prepare small potato balls (size - golf ball)
  • Heat oil in a pan (enough to dip the balls)
  • Dip the potato balls in the gram flour batter from all the sides and fry them on medium flame.
  • Give them a minute or two to fry and then flip them until they are golden yellow from all the sides (as shown in the picture given above)
  • Take out the potato balls from the oil and let a tissue extract any additional oil stuck on it.

 

Once your Vadas are prepared, take a Pav (sandwich- if the sandwich is big, make it into two pieces) cut from between, spread coconut chutney in between and now place the Vada on top, press it a little and close the pav (sandwich).
